Caramel Apples
6 Large or 12 small apples
2 cups heavy cream
2 cups sugar
1/4 cup unsalted butter
1/2 cup corn syrup (clear one)
Sticks
Wash apples
take out stems and place sticks.
place cream,butter,sugar, and corn syrup in a heavy bottom saucepan. Bring to a boil use a larger pot rather than a smaller one on medium heat boil until candy thermometer reaches 245 10-12 minutes. Shock in ice water and dip apples. When your dipping the apples if the caramel is still to hot it will not coat properly. Enjoy your apples. Great from Halloween to Thanksgiving
Macadamia Nut Bars
#1 butter
#1 brown sugar
12 oz honey
4 oz sugar
#2 chopped nuts,any kind
4 oz cream
1 -1/2 sheet pan baked pie dough shell
Bake pie shell make sure that the dough goes up the sides so the batter doesn't leak underneath.
Place all ingredients except cream and nuts unto a heavy bottom sauce pan. Bring to a full boil stir for 3 minutes. Turn off stove whisk in cream and stir in nuts. Pour unto pie shell. Bake in oven at 375 until it bubbles, Let cool completely. You can cut them in different shapes. Also you can bake this recipe as a pie or baby tarts instead of in a sheet. We like using Macadamia nuts but any nuts will be yummy.
Brown Sugar Shortbread
The great thing about this recipe is that the dough does not spread making it ideal for decorated cookies. We use it for our cookie favors, made to match any theme. The cookies are decorated with royal icing for added shine and color.
Ingredients
1 cup light brown sugar
½ cup cornstarch
3 ½ cups unbleached all-purpose flour
1 teaspoon salt
1 pound (4 sticks) unsalted butter, chilled and cut into ¼-inch pieces
1 tablespoon pure vanilla extract
Instructions
1. Combine brown sugar, cornstarch, flour and salt in a mixer bowl; stir well. Drop in butter and mix on low speed until the mixture is coarse and crumbly. Stop mixing as soon as the dough starts to come together. Add vanilla and mix until combined, 20 to 30 seconds.
2. Scrape half of dough from bowl onto a sheet of parchment paper and roll the dough out ¼ inch thick. Lift parchment paper onto a rimmed baking sheet and cover with plastic wrap. Repeat with remaining piece of dough. Chill both baking sheets in the refrigerator for at least 1 hour.
3. Preheat oven to 325F. Remove baking sheets from the refrigerator. Using a sharp knife or cookie cutter, cut the dough into desired shape. Place cookies on baking sheets. Each sheet of cookie dough should yield about 16 cookies. Place one sheet of cookies in the refrigerator while baking the other.
4. Bake cookies, one sheet at a time, on center rack of oven for 20 to 25 minutes each. Cool on the baking sheet for at least 20 minutes, then dust with confectioners’ sugar. Or decorate with royal icing.
Cheesecake
This cheesecake recipe is so good, its also very simple to make and comes out great every time.
Ingredients
#2 cream cheese
¾ cup sugar
2 eggs
8 oz sour cream
4 oz cornstarch
vanilla or vanilla
bean
cookie or graham cracker crust.
Instructions
1. Cream sugar and cream cheese, slowly add eggs.
2. Mix together cornstarch and sour cream.
3. Fold together with cream cheese mixture and add vanilla pour unto a crust you can use a regular cake pan or cheesecake pan; make sure that you spray it
.
4 .Bake at 350 degrees until it slightly crakes on the side usually 30 to 35 minutes.
No water bath required!
5. Chill for a minimum of 12 hours.
To remove from pan simply turn over and tap on counter your cheesecake should come right out of the pan. You can add extra flavor by adding orange or lemon zest.
